Perennial. Zones 4-10. To 5ft tall and 3ft wide. Full sun to part shade. Very drought tolerant. Lovely bee-friendly pale silvery-blue flowers bloom through July. All plant parts are edible. The new shoots can be harvested as a salad green in spring time, and the roots eaten as a vegetable or roasted as a coffee substitute. High in blood sugar balancing inulin.
